About Timonthy Duke
Chef Timothy Duke's reinterpretation of homely style cooking is what inspired him to create a menu with the perfect balance between simplicity and sophistication. Growing up in the Hunter, Timothy's passion for creating well balanced dishes evolves around the use of the freshest and locally sourced produce. "I want to create a space that's relaxed and friendly, with the dishes that I look forward to ordering when I dine out".
Twenty years of culinary experience has seen Timothy refine his skills through completing his apprenticeship at Port Stephens, before returning to his roots in the Hunter Valley, where he worked as Sous Chef at upmarket resorts and hotels. Creating and influencing menus has been a key point of Timothy's career, where he was most recently designing the modern and Mediterranean style menu as Sous Chef at the highly rated Baume Restaurant at Ben Ean Winery since its opening in 2017.
Timothy opened Duke's Restaurant & Bar with his partner Lindsay Ross in December 2020, creating a relaxed and refined dining experience in the heart of East Maitland.
